Immigration knows when you leave the UK through exit checks, airline and transport records, visa entry clearance records, shared dates, and biometrics.
Recently, the UK implemented exit checks at all ports and airports, whenever you leave the country, your passport and other travel documents will be scanned, recording your departure electronically.
This information is then used to update immigration records. This applies to anyone leaving the country whether through air, sea, or land.
